Planning the holiday bird
A turkey dinner has three numbers to get right: the size of the bird, how long it takes to thaw and how long it roasts. Get any of them wrong and dinner is late or the turkey is dry. This calculator works out all three from the number of guests and the weight on the label.
How big a turkey to buy
A whole turkey is about half bone and trimmings, so you need more raw weight than meat per person:
- 1 lb per guest feeds everyone at the meal.
- 1 1/2 lb per guest leaves leftovers for sandwiches.
- For a crowd of children or light eaters, 3/4 lb is enough.
For 10 guests with leftovers: 10 × 1.5 = 15 lb.
Thawing a frozen turkey
- In the refrigerator (40 °F or below): about 24 hours for every 4 to 5 lb. A 14-lb turkey needs 3 1/2 days, so start on Sunday for a Thursday dinner. A thawed turkey keeps another one to two days in the fridge.
- In cold water: about 30 minutes per pound, in its leak-proof wrapping, changing the water every 30 minutes. A 14-lb turkey needs 7 hours and must be cooked right away.
- Never on the counter. The outside warms into the danger zone long before the center thaws.
Roasting time at 325 °F
The calculator approximates the usual timetables for a whole turkey roasted at 325 °F: about 75 minutes plus 9.8 minutes per pound unstuffed, and 90 minutes plus 10.5 minutes per pound stuffed.
| Weight | Unstuffed | Stuffed |
|---|---|---|
| 8 lb | 2 h 35 | 2 h 55 |
| 12 lb | 3 h 15 | 3 h 35 |
| 14 lb | 3 h 30 | 3 h 55 |
| 16 lb | 3 h 50 | 4 h 20 |
| 20 lb | 4 h 30 | 5 h 00 |
| 24 lb | 5 h 10 | 5 h 40 |
Worked example: a 14-lb turkey for 10 guests
- Size check: 14 ÷ 1.5 = 9 guests with leftovers, or 14 with the 1-lb rule.
- Thawing: 14 ÷ 4 = 3.5 days in the refrigerator.
- Roasting unstuffed: 75 + 9.8 × 14 = 212 minutes, about 3 h 30.
- Resting: 30 minutes under loose foil before carving.
The thermometer is the real timer
Ovens, pans and birds differ, so treat the time as a plan, not a promise. The turkey is safe when a food thermometer reads 165 °F in the thickest part of the thigh, the innermost part of the wing and the thickest part of the breast. If the turkey is stuffed, the center of the stuffing must also reach 165 °F, which is why many cooks bake the stuffing separately. Start checking 30 minutes before the estimated time. If the breast browns too early, cover it loosely with foil.
